1 handful baby arugula washed and stemmed
30 g Truffles (Black or White Fresh Truffles work equally well) or preserved Truffles
Pink Himalayan Truffle Salt

Arrange the arugula, carpaccio and Grana Padano onto serving plates. Garnish with 10-15 granules of coarse Himalayan Truffle Salt, drizzle with olive oil. Garnish with grated Truffles.
